This bright, pea-forward spring cocktail includes vermouth, which Laura and Tara use as a “harmonizer” for gin. “It has a layering effect when combined with gin that makes the botanicals pop.”

Ingredients

SERVINGS: 1 Cocktail
  • 1½ ounces New Alchemy Distilling Arborist Gin
  • ½ ounce fresh lemon juice
  • ½ ounce Snap Pea–Tarragon Syrup (see recipe in this story)
  • ¼ ounce Carpano Dry Vermouth
  • Pea blossoms and/or sprig of fresh tarragon, to garnish

Preparation

Combine all ingredients except garnish in a cocktail shaker filled with ice. Shake vigorously for 10 seconds, then double strain (pour through a fine-mesh strainer) into a chilled cocktail glass. Garnish with pea blossoms and/or tarragon.
