Strawberry Peach Yogurt Pops

These popsicles make a healthy breakfast for a hot summer day. They’re also a great snack for kids, without the sugar. I make these with berries and stone fruit, too. Any healthy cereal will work if you don’t have granola.

Ingredients

  • 1 medium ripe peach, cubed
  • 1 ½ cup yogurt (any kind)
  • 1 tablespoon honey
  • ¼ cup water
  • 5-6 fresh strawberries, sliced
  • ½ cup of granola or cereal of choice

Instructions

Popsicle molds are inexpensive, but if you don’t have them, reuse small yogurt containers or Mason jars for a spoonable dessert.

TO PREPARE

Place the peaches, yogurt, honey and water in a blender and blend until smooth. Pour the mixture into popsicle molds, filling a little over halfway. Top with 3-6 slices of strawberries, pushing them down into the mold on the bottom, middle and top.

Moisten the granola with a little of the peach mixture and fill the remaining space with the granola.

Insert the popsicle sticks.

Freeze for at least 6 hours. Run hot water over the outside of the molds to loosen the popsicles when you are ready to serve.

Yield: 10 popsicles
