Summer Spritzes

California makers are reshaping a centuries-old ritual into something distinctly local, luminous and alive. Reclaiming the before-dinner drink with California-grown soul, apéritivo culture comes home to Marin and Wine Country, in all its citrus, herbal and low-proof glory.

FROM APÉRITIF TO APÉRITIVO

Most apéritifs can be served simply over the rocks with a twist of orange or lemon peel or as the featured ingredient in a classic 3-2-1 spritz mix (3 parts sparkling wine, 2 parts apéritif, 1 part sparking water). These celebrated mixologists offer their own twists on the classic in the recipes below.

An Amaro-forward twist on the classic Margarita from Lo-Fi apéritifs.
A bright, strawberry-forward spritz from Scott Beattie for Rue de Rêve.
Fun, tropically bitter spritz from Mommenpop.
Grapefruit and thyme meet sweet vermouth and sparkling wine in this Grove 45 spritz.
A gentler take on a classic Martini from Brooks Reitz for Scribe Winery.
