James Beard Award–winning chef Charlie Palmer, for example, suggests seasoning a heritage breed pig tenderloin with fresh-from-the-garden herbs, then slow-cooking it in a sous vide immersion circulator for the silkiest pork that will ever pass your lips.

Or consider Liza Gershman, a multi-faceted writer and photographer who has written 20 cookbooks, including Cuban Flavor: Exploring the Island’s Unique Places, People, and Cuisine. There, she tempts us with an uncommonly magical Mojito Cake, laced with fancy rum, lime and mint.

For these latest projects, though, Palmer and Gershman let other local food and wine artists take center stage. In Palmer’s new Wineland, he showcases iconic purveyors, spanning West Marin, Napa and Sonoma counties. For Gershman’s new Farm + Market: Healdsburg, she celebrates the Healdsburg farmers’ market, serving up recipes from its farmers, ranchers, makers, chefs, bakers, vintners, artists and avid home cook neighbors.
