IS A MOTHER-OF-PEARL SPOON REQUIRED? It is widely believed that using a metal spoon can impart off flavors, but Deborah Keane says it’s unlikely the caviar will be in the spoon long enough to do so. Mother-of-pearl or wooden spoons are more about the look.
HOW LONG DOES IT KEEP? Unopened, a tin or jar of caviar will keep for about six weeks in the fridge, Keane says, although it should also be placed within a re-sealable plastic bag with ice. Once the containers is opened, finish it within three days, as the eggs will start to oxidize and lose their pop.
