Rue de Rêve
“The Rue de Rêve already has strawberry as an ingredient, and we amplify that by making a strawberry simple syrup,” says renowned North Bay bar consultant, Scott Beattie. “The dry gin adds a touch of juniper complexity. For summer parties, it’s absolutely refreshing— bright, easy and impossible not to love.”

Ingredients
  

  • ounces Rue de Rêve Rosé
  • ¼ ounce strawberry syrup (recipe follows)
  • ¼ ounce fresh lemon juice
  • ¼ ounce dry gin
  • 3 ounces sparkling rosé wine

Instructions
 

  • Sliced strawberry and colorful edible flowers for garnish Pre-chill all ingredients in the fridge for several hours. Fill an Old Fashioned or wine glass with ice. Add the Rue de Rêve Rosé, strawberry syrup, lemon juice, gin and sparkling rosé and gently stir to mix. Garnish with strawberry slices and flowers.

STRAWBERRY SYRUP

  • In a small pot over high heat, bring 1 cup water and 1 cup sugar to a boil. Add 1 cup roughly chopped strawberries and reduce heat to a simmer. Continue to simmer for 5 minutes, then remove from heat and let cool. Strain the strawberries through a fine-mesh sieve and discard or save for another use. Store in the refrigerator for up to 2 weeks.
