Mixed Melon Skewers

The essence of summer, these simple melon appetizers come together quickly and showcase ripe fruit in season. These easy preparations are a study in contrasts. Salty and flavorful Serrano ham makes a delicious contradiction to juicy honeydew, cantaloupe or other sweet melon, while feta provides an acerbic counterpoint to watermelon’s sweet flavor.

Serrano Ham & Honeydew Skewers

Ingredients
  

  • 12 slices Serrano ham, brought to room temperature
  • 1 ripe melon such as honeydew, cantaloupe or Galia
  • Fresh Italian parsley leaves

Instructions
 

  • Tear each slice of ham in half vertically to make smaller strips for the skewers. Cut the melon in half and remove the seeds. Cut the halves into slices, remove the rind, and cut into ½-inch cubes. You should have about 24 pieces. Take a toothpick and thread with a cube of melon, a parsley leaf, and a piece of ham. Arrange on a platter and serve.

Watermelon & Feta Skewers

Ingredients
  

  • 4 cups cubed watermelon, seeds removed
  • 2 cups feta, preferably French-style, cut into ½-inch cubes
  • Fresh mint or basil leaves, plus chiffonnade for garnish
  • Balsamic vinegar or glaze

Instructions
 

  • Take a toothpick and thread with cube of watermelon, a cube of feta, a mint or basil leaf, and finish with watermelon. Drizzle a large platter with balsamic vinegar or glaze. Place the skewers on top, scatter with a chiffonade of fresh herbs, and serve.
