Light and Spicy Green Juice with Meyer Lemon, Arugula and Mustard Greens
Ingredients
- 5 cups celery (around 10 large stalks)
- 1 packed cup fresh cilantro, including stems
- 3 cups spinach leaves
- 1 cup chopped apple
- 1 cup arugula
- 1 cup mustard greens
- 1 large Meyer lemon
Instructions
- Juice all ingredients including stems and lemon peel using a juicer (not a blender). Enjoy immediately, or may be made a day in advance and placed in an airtight container such as a glass canning jar with a lid and stored in the refrigerator. Notes: The dry pulp produced after juicing may be composted. This recipe is not recommended for a blended smoothie.
