Pomegranate juice is delicious to drink on its own, or sweetened with sugar or honey. The juice is also the base of pomegranate syrup, molasses and jelly.
To make the juice, put the arils in a blender or food processor and pulse several times to break them open. Place a fine-mesh strainer over a bowl and add the crushed arils. Gently push the arils with the back of a wooden spoon to release as much juice as possible, but not so hard as to push the tiny seeds, which are bitter, into the bowl.
Two medium pomegranates yield about 1 cup of juice.
Store the juice in the refrigerator for up to 3 days or freeze for up to 6 months.
