Ingredients

- 1 teaspoon freshly shredded horseradish, or 2 teaspoons prepared horseradish
- ½ teaspoon caraway seeds
- 1 teaspoon sugar
- 2 teaspoons salt
- 2 tablespoons champagne vinegar
- ¼ cup water
- 1 tablespoon lemon juice
- 1 tablespoon vodka
- 2 medium red beets, washed, trimmed and shredded
Preparation
Place all ingredients except the beets into a small mixing bowl and whisk together until well mixed. Add the beets and stir to combine. Let stand in the refrigerator at least 30 minutes before serving. The pickled beets will keep for a few weeks in the refrigerator.
